Now that I’ve been vegetarian since the beginning of the year and aiming to be vegan by the end of the year, I’ve been trying out a ton of different vegan recipes. There are so many yummy recipes that I’ve tried that I’m just dying to share with you all! Here are my four favorite vegan recipes at the moment!
- Coriander Lentils Over Basmati Rice by Meatless Mondays
I came across this recipe while trying to use up some ingredients that were starting to go bad. Leftover spinach from another recipe was going bad and I had lentils sitting around collecting dust. I was craving daal, so I did a search and found this recipe! The flavors are extremely similar to daal, but the seasonings are a little more simple. I added the spinach and ended up with a delicious dinner. When I brought the leftovers into my office, everyone commented about how great it smelled. If you’re looking to cook more legumes or want to try some Indian cuisine, this simple recipe is the place to start! - Asian Garlic Tofu with Rice by The Garden Grazer
This recipe is so dang easy that if you mess it up you just can’t cook. Mix cubed tofu with hoisin sauce, soy sauce and a few cloves of garlic and fry it in a pan. Super easy, super simple and super cheap! I’ve made this with tempeh too and it’s amazing. - Jackfruit BBQ Sandwich from the Hot for Food Vegan Comfort Classics

THIS. WAS. SO. GOOD. You’ll need to buy the cookbook to try this recipe, but trust me, the price is 100% worth it even for this one recipe. The rest of the book is wonderful, but this one! Is! So! Good! I’ve never eaten jackfruit before and was a little nervous, but this was so tasty that it made me love jackfruit. The flavor comes from whatever barbecue sauce you choose. I used a mustard based one and boy – was it good. I used the jalepeno lime dressing from the back of the book as a topping for the jackfruit and served it all over rice. The tangy lime juice worked with the spice from the jalepeno and the mustard from the jackfruit. Even my “vegan food is disgusting” brother ate some of this when I made it into tacos! If he likes it, you will too. - Mushroom Stroganoff by Tasty
Don’t underestimate Tasty recipes. This one-pot dish came together quickly and only called for an ingredient or two that I didn’t already have in my pantry. Sweet! One-pot meals save me so much time and cleaning. I love that Tasty has an app that goes step-by-step, too. If you’re new to cooking, try that app!
I hope you will try some of my favorite vegan recipes. Before I went vegetarian, I couldn’t cook anything more than boxed mac and cheese or frozen meals. Becoming vegetarian forced me to cook more and sparked an interest in learning this new skill. These recipes are so simple that everyone can do them with little to no trouble.
